Blue Ocean Seafood is one of the few Belgian smokehouses that still smokes Dog-fish. Increasing prices and bigger interest in other smoked products like salmon and halibut are the two main reasons this product has almost completely disappeared from the Belgian market. By guaranteeing a qualitative and continuous product Blue Ocean Seafood succeeds in thriving despite a shrinking market.
Biology (Squalus acanthais)
Smoked dogfish is a small shark that usually hunts smaller fish and shellfish in big groups. It can grow to a maximum size of 160cm. Dogfish are known to be one of the only shark breeds to have poisonous fins. The part of the shark that gets smoked is its spinal cord.
Its mild taste and soft meat, makes it easy to combine with many different dishes.
